Ingredients
  

  • 4 ounce heavy whipping cream
  • 1/2 cup egg white protein powder optional
  • 1/4 tsp vanilla flavor
  • 1 1/2 tbsp Sumsweet Granular
  • 1 ounce cocoa butter
  • 0.5 ounce coconut oil
  • 3 tbsp cocoa powder
  • 2 tbsp sumsweet+ confectioners

Instructions
 

Ice Cream

  • Pour heavy whipping cream, egg white protein powder vanilla flavor, and SumSweet granulated into a freezer safe mixing bowl. Whip at the highest speed until a smooth mixture forms and the beaters or whips leaves an imprint in the mixture. Smooth top and cover and refrigerate.

Chocolate Coating

  • Melt cocoa butter and coconut oil in a heat safe bowl or double boiler. Add cocoa powder one tablespoon at a time and stir. Then stir in vanilla followed by SumSweet+ confectioners. Set aside to cool and thicken.

Putting it together

  • Using an ice tray, spoon chocolate into each cavity and tilt in multiple direction to let the chocolate coat the shape. Put in freezer for 3-5 minutes to quick set.
  • Then just fill it with ice cream just below the edge of the cavity. After it’s filled, place it back in the freezer for the ice cream to firm up again.
  • Then spoon chocolate coating to the edge you can refreeze to firm up on enjoy right away.
