
VANILLA CAKE
Delicious moist vanilla cake is perfect for any occasion. Eat it plain or add a delightful vanilla or chocolate butter cream frosting. Layer up for a tiered cake.
Ingredients
- 4 eggs
- 1/2 cup SumSweet or SumSweet+
- 1 teaspoon vanilla extract
- 2 tablespoon coconut oil melted or avocado oil or flaxseed oil or almond oil
- 2 cups almond flour 240g
- 1 teaspoon baking powder
Instructions
- Preheat oven to 160C (325F). Grease a 9" round cake pan with coconut oil or butter. Set aside.
- In a large mixing bowl, whisk eggs with SumSweet or SumSweet+, oil and vanilla. Whisk together for 1-minute.
- Whisk in almond flour and baking powder until fully combined.
- Pour the vanilla cake batter into the prepared pan.
- Bake for 25 minutes, in the center of your oven. Your cake is done when a skewer inserted in the middle of the cake come out clean.
- Cool 5 minutes in the pan then remove and place cake on a cooling rack. Cool for 1 or 2 hours before frosting or enjoy plain.
